A Day at the Beach

We had a great day at the San Onofre beach over the weekend. We were supposed to stay in a cottage all weekend long but I was only able to make it one night because our cottage was literally 15 feet for the amtrack railroad tracks and the worse was that the cottage was so filthy that I couldn't let Everett crawl around. We made the best of our shortened stay be hanging at the beach on the most perfect day.


Nathan was all smiles all day!

He even found a hole that he almost couldn't get out of.

New Fav Recipe: Chicken Angel Hair Pasta

Ingredients:
6 skinless, boneless chicken breast halves (3 breasts cut in half)
1/4 C butter
1 (.7 ounce) package dry Italian-style salad dressing mix
1/2 C white wine (I used Chardonnay)
1 (10.75 ounce) can condensed golden mushroom soup
4 ounces chive cream cheese
1 lb. angel hair pasta

Directions:

1. Preheat oven to 325 degrees
2. In a large saucepan, melt butter over low heat. Stir in the package of dressing mix. Pour in wine and soup. MIx in cream chees and stir until smooth. Heat through but do not boil.
3. Arrange Chicken in a single layer in a 9x13 inch baking dish. Pour sauce over.
4. Bake for 60 minutes in the preheated oven. Twenty minutes before the chicken is done, cook pasta according to directions on the box.
5. Serve chicken and sauce over pasta.

1st day of school

A big event happened in the Shaieb house last week - Nathan had his first day of pre-school. He was so excited to go with his new and shiny dinosaur lunch box. Here are a few pics of him.

Busy Weekend

We had a great weekend. On Saturday we went to Sea World and on Sunday we went to the San Diego Zoo. Sea World seemed a little boring this time. I don't know if it is because we have been there so many times or that Nathan made it really difficult to enjoy it because of his new phase of whining and screaming everywhere we go. Oh the power struggles! Regardless, I am happy to see Shamu anytime. The Zoo was so cool. It has been over a decade since I have been there and I was super impressed. We visited the Elephant Odyssey and was blown away. We all had a blast!
